Toasted Roti Sandwich

Toasted Roti sandwich is the tastiest way to use leftover roti. Leftover roti is the main problem of every Indian Kitchen. I have shared many recipes for leftover roti earlier also.
This is a very simple and quick recipe made in toaster. I have used potato stuffing, but you can use variety of stuffing according to the ingredients available at home and your taste.
For example, you can also use cottage cheese, tomatoes, capsicum, onion and black pepper or hung curd with veggies, Mayonnaise etc. I was having only one leftover roti, so prepared two sandwich only, you can increase the ingredients according to the quantity of leftover roti.
So, let us start.

Recipe ingredients :

1 leftover roti
1 medium potato boiled
1/2 small chopped onion
1/2 green chili
some cilantro
salt to taste
1/4 tea spoon red chili powder
pinch of turmeric powder
1/4 tea spoon roasted cumin powder
pinch of dry mango powder ( optional )
1 tea spoon refined oil or ghee for brushhing

Recipe instructions:

Peel the boiled potato and mash it well.
chop the green chili, onion and cilantro finely.
Combine all the ingredients in a mixing bowl and make a fine stuffing.

Spread the stuffing evenly over the roti as shown in the picture.
Cut from the center into two equal pieces with a sharp knife.
Now heat the Sandwich maker. Brush some refined oil or ghee on both the sides of roti sandwich.
Finally place it carefully in the Sandwich maker and roast till golden crispy.
Serve hot with tomato ketchup.
