Kacchi Keri ki longi
Kacchi Keri ki longi is a sweet and tangy instant pickle made with raw Mango, sugar and spices. It is a very popular dish made in every Indian home, but everyone has her own style of cooking it.
Today, sharing Kacchi keri ki longi in my style. It is very easy to prepare and you can refrigerate it for 10 to 15 days and consume it.
Children and women just love it. So, let us start.
Recipe cuisine – Indian
250 gm Raw Mango
3 tbsp sugar
1 teaspoon red chili powder
1/2 teaspoon turmeric powder
1 teaspoon coriander cumin powder
salt to taste
2 tbsp mustard oil
pinch of asafoetida
1/2 teaspoon cumin seeds
1/4 teaspoon black cumin
1/4 teaspoon fenugreek seeds
1/2 teaspoon fennel seeds
Recipe instructions :
Wash and cut the Raw mango into big pieces.
Take two glass water in a pan and boil the pieces on high flame for 10 to 12 minutes.
Insert a knife into the Mango to check if it is boiled properly or not. It will look fluffy. Cover a lid and keep aside for few minutes.
Strain the water and keep aside.
Now heat 2 tbsp mustard oil in a pan.
Mix all the spices in a bowl with 1 tbsp water and keep aside.
Add cumin seeds, when they crackle, add pinch of asafoetida, fennel seeds, fenugreek seeds and black cumin.
Now add the spices water and stir for a minute.
Add the Mango pieces, salt to taste and mix well.
Finally add 3 tbsp sugar and cook stirring occasionally till you get a thick syrup of sugar and Mango pulp.
Turn off the gas. Serve with chapati, Paratha or puri.
Best recipe for travelling and Lunch box.
Best thing of this recipe is that everybody likes the taste.
You can use it for 10 to 12 days by refrigerating it.
