Aloo Bajra paratha
Aloo Bajra paratha is my latest experiment with food. Actually there was some leftover stuff of aloo paratha. I tried this Bajra aloo paratha and it came out so good.
You can make this recipe with leftover aloo stuff or you can make the stuff if you don't have it.
Very quick breakfast recipe if you have potatoes already boiled. So, let us start the recipe.
1 Cup Bajra flour ( pearl millet )
2 big potatoes
1 small onion
1/2 teaspoon chili ginger garlic paste
1 tbsp kasoori methi
Pinch of turmeric
1/4 teaspoon red chilli powder
Salt to taste
Some refined oil or cow ghee for shallow fry
Boil the potatoes for 1 whistle.
Let them cool. Peel the skin and mash them properly. Chop the onion finely.
Now combine the Bajra flour, mashed potatoes, chopped onions, ginger garlic chili paste, salt to taste, kasoori methi and all the spices and knead a fine dough without using any water.
Dough will be soft, so either use two plastic sheet for rolling the paratha or make it by tapping it on your palms as shown in the picture.
Heat a skillet. Keep the flame medium.
Place the paratha carefully over it.
Flip after two minutes, apply cow ghee or refined oil and flip after two minutes and fry from both the sides till it becomes brown and crispy.
These paratha are very delicious, soft from inside and crispy from outside.
Serve hot with chutney.
